Delicious Raw Chocolate Recipe
A few people have asked me recently about making raw chocolates so I thought I would share my receipe here for you all to create and enjoy.
The benefit of raw chocolate is that it is unroasted so it maintains its antioxidant properties and minerals including magnesium, iron and zinc which is reduced in ordinary processed chocolate. The other benefits of chocolate are also reduced in the processed version such as the mood enhancing feel good effects. Processed chocolate is usually mixed with sugar and dairy too and if you are trying to avoid these for health reasons then making your own raw chocolates is a very rewarding alternative. I find that raw chocolate gives me a boost of these mood enhancing effects without a sudden dip in energy that you get from ordinary processed chocolate.
- 100g of raw cacao butter or use 50g cacao butter and 50g coconut oil
- 50g of raw cacao powder or use 25g of cacao powder and 25g of raw carob powder
- 1tsp (ish) of raw honey or you can use coconut sugar, agave syrup, maple syrup
- optional extras include pinch of salt, cinnamon, vanilla powder or a couple of drops of food grade essential oil (orange, peppermint etc)
Begin by melting the cacao butter/coconut oil over a bowl of hot water. Make sure you don't get any water into the mixture.
Once melted add in the raw cacao powder/carob if using. Use a wooden spoon for mixing as metal spoons can alter the mineral content (apparently)!
Once mixed add your sweetner of choice and how much you use is dependant on whether you have used carob powder which has a natural sweetness to it so you need less sweetner. Also depending on your taste buds, so taste test and see how much works for you. You will probably find over time that you use less and less and sometimes I don't use any and just sweeten with the raw carob and cinnamon or vanilla.
Add any other flavourings that you fancy such as essential oils, pinch of salt, cinnamon, cardamon, vanilla, ginger but not all at once!
Stir your mixture and send it love! This is where I like to imagine that I am Vianne from Chocolat, making delicious treats for my chocolate shop in France. I send my chocolate mixture Reiki energy or sing mantras and it always makes it taste even more delicious.
Once you're happy with your mixture pour it into moulds or into one big mould that you can break up once set. Put in the fridge to set.
Make a cup of herbal tea and sit and enjoy your chocolates while listening to some beautiful music and watching the birds in the trees outside :).
